Tasting Notes

Pale straw in colour, with aromas of citrus and strawberry, the palate is soft and creamy with a fine, crisp finish. Chardonnay Pinot Noir sourced from our network of vineyards and growers across South Australia . Our focus on this style is to build up layers to the palate through the process . Typically, we achieve this through the use of Malolactic fermentation on the Pinot Noir component which complement the muddled strawberry flavours. Fermentation temperature are a touch warmer to build breadth and weight in the palate matching the citrus drive of early harvest Chardonnay . The secondary fermentation takes place in specifically engineered pressure vessels to retain the right level of fizz and shape of the bubble. We then bottle under pressure with specific filling equipment.
